Though she consistently referred to them as ‘skoones’ , My aunt Sandra’s scone recipe is delicious. We made some from fresh peaches we got at the market and blueberries. Here is the recipe for you to enjoy:
2 Cups Flour
3 tsp Baking Powder
1/4 tsp Salt
2 tblsp sugar
1/2 cup COLD(this is key) butter
2 Eggs
1/2 cup Milk
Around 1.5 to 2 cups of fruit of your choice(we used peaches and blueberries)
Mix dry ingredients in bowl, add butter and cut using pastry cutter(should be crumbly and drier than you’d expect).
Add fruit (dust fruit with flour before adding)
Put eggs in bowl and whisk. Add milk.
Add egg and milk mixture to dry ingredients.
Knead together(around 3 or 4 times only).
Press into a fairly large circle(rolling pin + little bit of flour will help)
Cut into 8 triangles.
Place on cookie sheet(parchment paper on sheet will make these no mess + no stick - woop!)
If making fruit scones sprinkle sugar on top before baking.
Bake at 400 degrees for around 20 minutes.
Note: If making savoury scones(i.e. cheddar & bacon) omit sugar from recipe.
Other note: We listened to the newest joel plaskett album while we baked. We suggest you do likewise.
